Method
Making the Starter
- Put flour, yeast and milk into the bowl of a stand mixer.
- Using a spatula, mix until well combined.
- Cover with plastic wrap and let sit for 45 minutes in room temperature.
- Once it has formed some air pockets, move on to make the dough.
Making the Dough
- Add in eggs, flour, sugar and salt into the starter.
- Mix on medium speed until well combined.
- For 10 to 13 minutes, gradually increase speed to medium-high and scrape down the bowl every 4 to 5 minutes.
a. The dough should now not stick onto the sides of bowl and becomes shiny & elastic. - For 13 to 15 minutes, keep the mixer running and gradually add in butter (1 tbsp at a time).
a. Add the next tablespoon of butter only if the previous one has been mixed well.
b. Continue mixing until the dough has passed the window test. - Cover bowl with plastic wrap and let it rest for 1 hour or doubled in size.
- Scale dough and divide by 8.
- Punch dough piece to release air bubbles.
- Fold short ends towards each letter as if you are folding a letter.
- Flatten dough piece and tightly roll to form a ball starting with short end.
- Repeat step 7 - 9 with all dough pieces.
- Grease 8" x 5" loaf pans with butter and place dough seam-side down. Cover with plastic wrap.
- Let proof for 1 hour until puffy and doubled in size.
- Brush egg wash on top of loaf.
Making the Egg Wash
- In a small bowl, whisk together egg and milk.
Baking
- Preheat oven to 190°C.
- Bake dough for 25-30 minutes until the top is golden brown.
- Let cool.
